STERIKOCH - Possibilities of Processing

 

The Sterikoch plants are suitable for the steam cooking of the raw product as well as for the pasteurization and sterilization of foodstuffs in bags, bowls, glasses, tins, and so on. In the second use case the plants work with water sprinkling.

It is an important advantage of the Sterikoch plants that the various processing possibilities are automatically operated.
The operable range of temperature is up to 140o C, the maximum high pressure up to 
4 bar.
This Sterikoch model will be injected by an external autoclave. 

Example: Pre-cooking and sterilization of beetroot (“Randen” in CH) in plastic bags.

The pre-cooking with steam reaches a core temperature of 60 o C - 80 o C. The processing time for it amounts to 45 minutes. The pro-cooking avoids that juice will accrue during the following sterilization.

The second step is the sterilization of the beetroot (“Randen”). The maximum core temperature amounts to about 115 o C, the value of sterilization should be between 1,5 and 2, the cooking value 80 – 90. The processing time for the sterilization amounts to 120 minutes.

The charging capacity of the Sterikoch type IV amounts to 800 kg. (1200 kg for steaming).

Many other processing possibilities are practicable with the Sterikoch autoclaves.

Examples:


Potatoes intended for the potato salad industry, 
potatoes in their skin for household use, 
boiled beetroots, boiled root celery, boiled carrots, etc.
  Sterilizing and pasteurizing with hot water sprinkling.

Examples:

Packaged in plastic bags: potatoes and other tubers / root vegetables, vegetables - washed and possibly cut - for large canteen kitchens, the food industry and for household use.

Sterilized potatoes in plastic foil, one bag contains 1 kg. Boxes contain 2 packages of 1 kg each. When large quantities are purchased, the usual package size is 5 kg.

   

When the foil is exposed to heat treatment,  products will afterwards have a long shelf-life.

 

Performance example:

Sterikoch IV autoclave, suitable for 4 rack trolleys: approx. 800 kg/h of potatoes, packaged in bags of 5 kg each.

Sterikoch III, II and I each hold one rack trolley less and therefore have a lower capacity.
